Everyone has at least one food that just transports you back to your childhood. Pimento cheese is one of those for me. As far back as I can remember we have been eating pimento cheese. It was a summer lunch staple when we were growing up. Pimento cheese is a family favorite that is fast and easy to make.
After perusing Pinterest one day, I discovered that the type of pimento cheese we know and love was nowhere to be found. Most of the recipes I found contained cream cheese, spices, and other ingredients. Our family favorite only contains 4 ingredients. One of which is a secret! So today I’m sharing our family recipe with all of you. I hope you love it as much as we do.
Ingredients
First, you’ll need a 16oz block of mild or medium cheddar cheese shredded. Don’t use prepackaged shredded cheese. I don’t think it works as well.
Next, you’ll need a 6oz jar of pimentos and the secret ingredient, an 8oz can of crushed pineapple. The pineapple really brings out the flavor of this dish. Drain both the pimentos and pineapple, as you shred the cheese. You will also need Whipped Dressing (aka Miracle Whip), which holds everything together.
Directions
After shredding your cheese dump in the drained pimentos and crushed pineapple. Then add a couple large spoon fulls of Whipped Dressing. Start small with the Whipped Dressing, you can always add more. Stir everything together, making sure all the cheese gets mixed in. If your pimento cheese looks a little dry, add more Whipped Dressing. The amount of Whipped Dressing really has to do with your preference. Do you like a slightly dry dish or more creamy? I ended up using about 1 cup.
Enjoy
Now that you have the pimento cheese created, it is time to enjoy. We love to eat it in sandwiches, on crackers, or as a chip dip. You could even spread it on celery or other vegetables. The possibilities are endless.
Pimento Cheese with a Secret Ingredient
Ingredients
- 16oz block mild or medium cheddar cheese
- 6oz jar pimentos
- 8oz can crushed pineapple
- 1 cup Whipped Dressing (aka Miracle Whip), plus more to taste
Directions
Drain pimentos and crushed pineapple. Shred cheddar cheese into a large bowl. Add drained pimentos and pineapple and Whipped Dressing. Mix everything together. If it seems dry, add a little more Whipped Dressing. Serve with crackers, vegetables, chips, or in a sandwich.
